2 + ⅓ Cups (280 grams) of all-purpose flour

1 cups (230 grams) of butter - room temperature

½ Cup (100 g) of brown sugar

½ cup (100 grams) of white sugar

2 eggs

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon vanilla extract

½ cup (100 g) whole milk chocolate chips

½ cup (100 g) dark chocolate chips

Directions
Preheat oven to 370 degrees F and prepare your KPKitchen Baking Sheet with your KPKitchen Silicone Baking Mat.
In a medium sized mixing bowl, cream your butter, the brown and the white sugar and the eggs. Add your vanilla extract and mix until smooth.
Next, add flour, baking soda and salt and mix until a dough forms.
Add the chocolate chips. The dough is very, very tough and firm!
Place small balls on your tray with your silicone mat on it - a maximum of 6 balls per tray. The cookies will run extremely apart.
Now bake for 8 - 10 minutes - they should have a light brown edge. After baking, the cookies are very soft and fragile, you have the feeling that they are not baked yet.
Allow cookies to cool for 5 minutes and then transfer them very carefully with the KPKitchen silicone mat to your KPKitchen stainless steal cooling rack. After they have cooled down they are firm.
The cookies should be slightly brown and crispy on the edges, but remain soft in the middle. Enjoy!

Only use butter. Don't bake the cookies for too long or they will harden.

The cookies caramelize as they bake and get nice and crunchy on the edges and gooey soft in the middle. Conclusion: brown sugar + butter = dream team!
The next secret ingredient is salt. Salt is a flavor enhancer - it balances the sweetness and brings out the caramel flavor. Without salt, the cookies taste bland and too sweet.
