When life gives you lemons, make lemon muffins! These lemon muffins. Light, fluffy and extra lemony, these easy lemon muffins have an extra citrus hit and teste amazing. They are also super easy to make! Perfect to welcome the spring on easter.
In a medium sized mixing bowl, combine flour, sugar, baking powder, salt and lemon zest. Whisk until combined. Set aside.
In a separate mixing bowl, combine yogurt, vegetable oil, milk, egg and lemon juice. Whisk until combined.
Pour the wet ingredients into the dry ingredients. Using a spatula, fold the ingredients together until they are just combined. Do not over mix.
Divide the batter evenly into each muffin cup, filling all the way to the top.
Bake your muffins at 400 degrees F for 10 minuets and then reduce the temperature to 350 degrees F for 25- 30 minutes. The muffins are done when they become golden brown on top or an inserted toothpick comes out clean.
Allow the muffins to cool for 10 minutes before moving them to your KPKitchen cooling rack.
