Double Chocolate Chip Mini Muffins

1 1/2 Cup (180 g) All Purpose Flour
1/2 Cup (100 g) Granulated Sugar
6 Tablespoons (72 g) Unsweetened Cocoa Powder
1 Teaspoon (5 g) Baking Powder
1/2 Teaspoon (3 g) Salt
1 Teaspoon (5 ml) Vanilla Extract
1 Cup (235 ml) Buttermilk
7 Tablespoons (100 g) Unsalted Butter (melted)
1/2 Cup (87 g) Mini Chocolate Chips

KPKitchen Baking Tools Used in This Recipe
Preheat oven to 350 degrees F and lightly grease your KPKitchen mini muffin pan.
In a medium sized mixing bowl, use your KPKitchen stainless steel measuring cups and combine the flour, sugar, cocoa powder, baking powder and salt. Set aside.
In a separate bowl, use your KPKitchen liquid measuring cup and mix all the wet ingredients together until fully combined (vanilla extract, buttermilk and melted butter.) Note, if you don’t have buttermilk, see notes below.
Combine the wet ingredients with the dry ingredients and mix just until combined. Don’t over mix.
Next, fold in your mini chocolate chips.
Divide the batter evenly into each muffin cup, filling all the way to the top.
Bake for 20 minutes or until a tooth pick inserted comes out clean.
Transfer the mini muffins to KPKitchen’s cooling rack too cool.
If you don’t have buttermilk you can make your own at home. Simply add 1 tablespoon of vinegar or lemon juice to your measuring cup and then add your milk until it reaches 1 Cup. Let sit for 5 minutes. And now you have buttermilk!
*When making your own buttermilk, whole milk works best. However, regular milk can be substituted.
